Baihe & Broccoli Stir Fry
This fragrant side dish pairs crunchy broccoli with satisfyingly chewy baihe and the delicate flavours of ginger, spring onion, and red pepper. Serve it with the protein of your choice or use it to top a bowl of egg fried rice. Its key ingredients include:
Baihe: Neutral, sweet, and slightly bitter, baihe nourishes yin, moistens the Lung, and calms the mind.

Recipe (serves 4)
Preparation time: 10 minutes + 3 hours soaking time
Cooking time: 10 minutes
Ingredients
30g dried baihe
1 tablespoon coconut oil
1-inch piece of fresh ginger, roughly chopped
2 spring onions, sliced
200g tenderstem broccoli, cut into evenly sized pieces
Half a red bell pepper, deseeded and thinly sliced
3 tablespoons rice mirin or cooking wine
Salt, to taste
Method
Place the baihe in a bowl and cover with cold water. Set aside to soak for at least 3 hours.
When the baihe has been soaked, drain off the water and set the rehydrated baihe aside while you prepare the other ingredients.
Heat the oil in a large frying pan or wok. Add the ginger and spring onions and stir-fry on a medium heat for 60-90 seconds, until they release their aromas.
Add the broccoli, baihe, and pepper, and continue stir-frying for a further 5 minutes, or until the broccoli is just beginning to soften.
Add the mirin or cooking wine and stir-fry for a further 1-2 minutes, until the liquid has evaporated.
Season with salt to taste and serve.
