Tofu Panna Cotta

This plant-based take on a classic Italian dessert is rich in protein and not too sweet, making it a virtuous treat to enjoy as the nights draw in. It is super simple to make, with just a few ingredients, including:

Tofu: Cold, sweet, and salty, tofu moistens the Lung, nourishes qi and yin, and aids digestion.

Miso: Warm, salty, and sweet, miso nourishes the Blood and detoxifies.

Vanilla: Warm and sweet vanilla disperses cold and warms the centre.

Honey: Neutral and sweet, honey nourishes both yin and qi.

Recipe (serves 2)

Preparation time: 5 minutes

Cooking time: 5 minutes

Ingredients
  • 150g silken tofu

  • 100ml soya milk

  • 1 teaspoon white miso paste

  • 1 teaspoon vanilla extract

  • 3 teaspoons agar flakes

  • Honey to taste for drizzling


Method
  1. Place all of the ingredients except the honey into a food processor and blitz until smooth.

  2. Pour the mixture into a pan and bring to the boil.

  3. Boil for approximately 5 minutes, stirring continuously, until the mixture thickens noticeably.

  4. Pour into moulds and allow to cool slightly before refrigerating.

  5. Leave in the refrigerator for around 3 hours or until fully set, then turn out onto plates and drizzle with honey to serve.
