Walnut "Parmesan"

This savoury treat can be used in place of Parmesan to sprinkle over sauces, soups, and stews. It contains all the goodness of walnuts and just as much protein as the real thing.

The other ingredients counteract much of the bitterness of raw walnuts, so it is a great choice for people who don’t usually like these nuts. Plus, it’s incredibly easy to make and can be ready in a matter of minutes. The stars of the show include:

Ingredients
  • 1/2 cup of walnuts

  • 1/2 cup of nutritional yeast

  • 1 teaspoon white miso paste


Method
  1. Place all the ingredients in a food processor and pulse until the mixture resembles breadcrumbs.

  2. Store in an airtight container in the refrigerator and sprinkle over the dishes of your choice.
